This demonstration dinner was organized as part of a family reunion weekend in the Hudson Valley for 21 adults and three children. Family members traveled from as close as New York City to as far as India. We offered several menu options, and the family chose a Spanish Tapas themed menu. Chef Tim Forringer led the group in the partially hands-on preparation of the following menu — highlighting throughout the spices and techniques that are important in Spanish cooking.
– Tortilla Espana (Egg, pepper, and potato)
– Roasted Shishito Peppers with Lemon Lime Aioli
– Mushroom Escabeche
– Swiss Chard and White Bean Stew with Smoked Paprika
– Spicy Chorizo Meatballs Stewed in Cider
Baked Fish with Sofrito Sauce
