Locally-grown and raised food is a treasure and one we’re excited to celebrate. Valley Variety is collaborating with Letterbox Farm and Chef Tim Forringer on seasonally fresh dinners.
CELEBRATE THE SEASON OF BOUNTY AT OUR DEMONSTRATION DINNER ON THURSDAY, AUGUST 4, 6:30–9PM.
It is often hard for farmers and home gardeners to keep up with all the fresh produce coming from the garden in the summer months. But, there are creative ways to cook and preserve all your produce to enjoy now and store some for when the times are not as bountiful. Join Chef Tim as he turns summer staples into a great Italian-themed dinner—inspired by his experiences cooking at Union Square Cafe as well as from his own home garden.
The menu for evening (subject to modifications depending on the actual harvest):
Crispy Pickled Radish, Cucumber, and Onion Salad with mixed greens and oregano vinaigrette (demo)
Garlic Basil Spachcocked Chicken (demo)
Roasted Shishito Peppers with lemon aioli (demo)
Herbed Hard Polenta
Fairytale Eggplant and Peppers in spicy fresh tomato sauce (demo)
Lemon Verbena and Honey Custard
Before sitting for dinner, Chef Tim will demonstrate inspiring options to make the most of these seasonal ingredients. Among the techniques Chef Tim will demonstrate you’ll learn how to prep a chicken for quick roasting, make crispy pickles, and a spicy eggplant tomato sauce.
Throughout the evening, you’ll have a chance to chat with the chef and the farmers from Letterbox Farm and try wines selected by Hudson Wine Merchants to pair well with the menu.

About the Farm
Letterbox Farm is a collectively owned and operated commercial farm in Hudson, NY. They are working together to build a diverse and sustainable business. The farm is located on 64 acres of fields, woods, ravines, and mountainside, just outside downtown Hudson. They raise vegetables, herbs, pork, chicken, eggs, and rabbit using best practices in animal welfare and organic management. The farm’s goods are distributed at farmers markets, restaurants in the valley and Manhattan, and a full-diet CSA.
About the Chef
Tim Forringer is graduate of the Culinary Institute of America. He’s honed his craft at esteemed restaurants, including Union Square Cafe, The Equinox Hotel and Gigi’s Trattoria. Tim specializes in cooking Italian, Mediterranean, Korean, Asian and Austrian cuisines. He especially enjoys sharing his knowledge about different cuisines and cooking techniques with home cooks.
