On Saturday, June 27, Chef David Chicane of Hudson Food Studio led a comprehensive class on knife selection, use, care and safety. In this hands-on class, the group learned how to maintain a sharp edge and the best way to cut vegetables, fruits and herbs. The fruits (and veggies) of their labor were the ingredients of a refreshing lunch of a chilled asparagus soup and summer salad.

The class was great for beginners and those who want to improve their basic knife skills. Everyone was encouraged to bring their kitchen knives to use during the class. We also had several knives for people to try.

Chef Chicane is best known for his clean, simple, fresh approach. At Hudson Food Studio, he embraces this philosophy with his creative extrapolation to dishes he experienced during his travels through Vietnam, Cambodia, Thailand and Laos. He enjoys partnering with local farms to provide the ingredients for the menu’s “staple” dishes, plus the excitement of receiving a basket of new things with which to create. He offers private chef services to select clientele.

Hudson Food Studio is located at 610 Warren Street, Hudson NY 12534. It is open for dinner every night, except Tuesday.
