For this event, we partnered with Tour de Forks, a culinary travel company, for one day of their 4-day epicurean adventure to the Hudson Valley. On Wednesday, September 30, Tour de Forks arranged for Chef Anita Lo to join the group foraging for wild mushrooms and then feasting on a meal we prepared together using these delicious fungi.

The day began with a mushroom foraging expedition led by a member of the Hudson Valley Mycology Association (HVMA). She shared how to identify some of the more common varieties in this area. The day was wet which proved to be perfect for finding a bag full of wild mushrooms. The group reconvened at Valley Variety for a hands-on class of cooking with the wild mushrooms we foraged along with others. Chef Anita Lo led the group in preparing a three-course dinner.

Green Apple and Olio Nuovo Posset with Lemon Verbena
Orecchiette with Wild Mushrooms and Lascinato Kale
Slow Cooked Halibut with Wild Mushrooms

Dinner was served with wines selected by Hudson Wine Merchants.
