This demonstration dinner was organized as part of a pre-wedding weekend getaway to the Hudson Valley for a group of friends. We offered several menu options, and the group chose a Spanish Tapas themed menu. Chef Tim Forringer led the group in the hands-on preparation of the following menu — highlighting throughout the spices and techniques that are important in Spanish cooking.

Small Plates
– Tortilla Espana (Egg, pepper, and potato)
– Roasted Shishito Peppers and Fingerling Potatoes with Lemon Lime Aioli and Saffron Tomato Aioli
– Mushroom Escabeche
– Swiss Chard and White Bean Stew with Smoked Paprika
– Spicy Chorizo Meatballs Stewed in Cider

Large Plate
Roast Pork Roulade with Salsa de Pasitas Rojas


About the Chef
The chef is Tim Forringer. He graduated from the Culinary Institute of America and has cooked at a number of restaurants, including Union Square Cafe, The Equinox Hotel and Gigi’s Trattoria. Tim specializes in cooking Italian, Mediterranean, Asian and Austrian cuisines. He especially enjoys sharing his knowledge about different cuisines and cooking techniques with home cooks.
