Brent will explain the cheese making process, from the animal to the final product, including variations in taste, consistency and other qualities of the milk and the resulting cheese based on the grasses the various pastured animals graze on, the time of year and stage of lactation.
Brent is a master cheesemaker since 1990. He bought his first farm in Tuscany in 1991 with his partner Alessandro and began making artisinal cheeses. They came back to the U.S. in 2014 and are now making cheese with the milk from free-roaming, pastured cows and goats at Lime Kiln Farm in West Coxsackie, NY.
