Learn the technique for making super-healthy fermented foods at home from a master fermentation teacher.
Michelle will guide the group through the ABC’s of fermenting fresh vegetables as we prepare sauerkraut in class, and everyone will take home a jar of their own. She will instruct us on the various vegetables that are good for fermenting and how to incorporate these cultured foods in your daily diet for nutrition and deliciousness. We will come to understand the health benefits of live cultured foods, the varieties of vegetables to use and variations in different cuisines such as Kim Chi.
This hands-on class will be followed by tastings of cultured foods including vegetables, cheese and sour dough bread, all locally produced.
Michelle Kaplan is an accomplished fermentation teacher. Based in Great Barrington, Michelle is the organizer of the popular annual Berkshire Fermentation Festival.
